Dinner tonight is crispy roast chicken (butter on the skin), basmati, and garlicky swiss chard and spinach. 

A hack I learned from working in restaurants for yummy greens is to chop and then wash those greens really well, then sauté them in a bit of olive oil, only adding chopped garlic and s&p in the last minute of cooking. I top mine with sesame seeds and fresh lemon. Bring on spring.☀️

Slow cooker flank steak tacos🌮 tonight. A return to homeschooling in Toronto has me using my slow cooker, and cooking is giving me a little bit of a sense of control.☺️How is everyone holding up?

These tacos are a family fave and the meat is deliciously simple to make. Top with pickled red onions, avocado and feta or queso fresco. Recipe in my profile.🧡

Lunch is a working mother’s self care. Green salad with a teaspoon of miso whisked into the dressing. Alongside what I call a “dirty scramble”. A shallot (or onion) quickly sautéed with chopped sundried tomatoes before eggs get stirred in. The sunshine is pouring into my house, it’s Easter this weekend so I’m menu planning, and my littlest guy turns 3 Friday so a treat is in the works too. Happy Tuesday friends.🧡

Auditions this morning for Easter breakfast. 🐣 The GF buckwheat waffles made the cut. Crispy, fluffy and best with butter and fresh fruit. Hands down, a waffle maker was my best quarantine kitchen purchase so much faster than pancakes.👌🧡

To make:
1 cup gluten free cup for cup flour 
1/4 buckwheat (love @bobsredmill )
1 cup milk (non dairy works)
1/2 tsp cinnamon 
1/2 tsp salt
1 tsp baking powder 
3 tbsp coconut or canola oil
1 tsp vanilla 
1 egg 

Mix wet ingredients well and sprinkle the dry ingredients over to. Stir until just combined. I cook on level 5 (highest).
Grateful for morning spring sunshine and feeling reborn after the longest winter ever. Pulled out plates and bowls from travels years ago in North Africa and filling them with all the fruits.🧡
