Zucchini spelt muffins with walnuts and raw sugar on top. Moist, healthy and make the house smell so good. January blues call for comfort food. Flattened roast chicken and Caesar salad for a quick supper last night. I grabbed the dressing from my @mamaearthorganics delivery and the @trulocal chicken already flattened.

To make: Roast chicken at 400 degrees for 45 minutes. I seasoned mine with herbamare salt, pepper and a dollop of good barbecue sauce.

What I’m drinking tonight! Ginger beer mocktail. 

Fill glass with ice, top with 1/3 ginger beer, 1/3 kombucha and 1/3  bubbly water. Lemon or lime slices too.

Oh 2020 you were a year. Coming out of it with a lot more tenderness and compassion. We moved homes, renovated and attempted to work & home school. So much growth. And still going. Happy new year my friends!💥✨

Taking a tiny break from chocolate and gravy to bring in some roasted veggies. Za’atar roasted cauliflower is hearty and just what I want after the days of tobogganing we’ve been doing.

To make:
1. Wash and chop one head organic cauliflower into small pieces.
2. Heat oven to 375 degrees. 
3. In large bowl mix together 2 TBSP za’atar and 4 TBSP olive oil with salt and pepper. Rub this all over the cauliflower pieces.
4. Line a baking sheet with parchment and roast cauliflower for 45 minutes flipping everything halfway. Enjoy!🧡
